GAP: “Grab a PINT”- egg salad boats

Did you know if I don’t keep healthy snacks on hand, I grab junk? You too? I am making a better job of grabbing a PINT. Not the kind of pint you are thinking of, like down at the local pub with the gang on a Friday night- that’s nice too. What I mean here is a pint size Mason jar to hold layers of healthy snacks. Today’s snack really makes up quickly if you are one to hard-boil a few eggs at a time to keep on hand for snacks or salads. Last week’s PINT of Smoked Salmon Rolls contained some hard-boiled eggs too, so you see it is a good idea to make a few.  The cucumber makes the perfect paleo “bread” for this snack. Remember to garnish your snacks to make them appealing to you, the more appealing they are, the less likely you will grab a brownie- maybe.  I like to add a layer of fruit, and like last week’s I added red grapes as they are so sweet and juicy this time of year.

Just before I run out the door to the gym, run errands, or to pick up kids, I grab my single wine bag, purse, and keys. I was never a big giant purse kinda gal, this one holds my money, phone, and lipstick. Who needs more?  My single bottle wine bag holds my PINT o’snacks and a pint of iced water which I like to make special by adding a wedge of lemon or lime, a strawberry, a slice of cucumber, or herbs. The more special you make your snacks, the better chance you have of staying on a healthy path.  Put some time into you, you are worth it.

GAP- grab a PINT, healthy snacking on the go.
Ingredients
  • 1 medium cucumber, about 9 inches long
  • 2 hard-boiled eggs, finely diced
  • 2 tsp. minced red onion
  • ½ tsp. dijon mustard
  • ½ tsp. tarragon vinegar
  • 1 pinch sea salt
  • fresh ground black pepper, a few twists
  • 1 Tbls. mayonnaise
  • 4 grape tomatoes for garnish, optional
  • red grapes
  • 6 large grease-proof cupcake liners
Instructions
  1. Peel cucumber and cut lengthwise in half.
  2. Using a small spoon, scrape out seeds leaving a well down the center of each cucumber half. Pat each half dry with a paper towel. Set aside.
  3. In a small bowl mix together eggs, onions, mustard, vinegar, salt and pepper, and mayonnaise until well blended.
  4. Fill one half of the cucumber with the egg salad.
  5. Cut cucumber into 4 even pieces and top with a grape tomato, of course you can use what garnish you would like, such as an olive, piece of red pepper, or a spring of parsely.
  6. Place each egg salad boat in a cupcake liner.
  7. Place some grapes in 2 cupcake liners.
  8. Place one serving of grapes in each PINT mason jar and top with two layers of the egg salad boats. This recipe makes 2 PINTs for snacking on the go.
Notes
There is no cook time to this recipe if you have the eggs already made. It is a good idea to always have hard-boiled eggs on hand. Some stores even sell hard-boiled eggs if you do not have the time to make them yourself. Save the second half of the cucumber to either double this recipe for 4 PINTS or another use.
