Pumpkin Galore

Gemütlichkeit. I love that German word. It means warm, cozy, cheerful and is often associated with the Holidays- that wonderful time of food, family, friends, and music. It seems as though when we enter Autumn and we suddenly yearn for things of comfort and coziness, like warm sweaters, boots, scarves, apple pie, stews, and hot cocoa. All things Gemütlichkeit that is! I wish I could teach you how to say the word but that “u” is hard to describe. But anyway, I find all things pumpkin at this time of year are Gemütlichkeit. Here are a few of my favorites.

Spiced Pumpkin Creme was a hit at my Book Club the other night. A scoop of this creme stirred into a mug of hot water topped with a mound of whipped cream was pure delight for the ladies on a chilly Autumn evening. A few us us even enjoyed a splash of Brandy.

Pumpkin Roll Pancakes with Cinnamon Cream Syrup is everything you love about eating pumpkin cake rolls but adds a delicious Cinnamon Cream Syrup. If you never make these pancakes, at least make that syrup, you may end up eating it with a spoon.

Two Ingredient Pumpkin Cake.  Either baked up in jars or in a baking dish and topped with Apple Cider Glaze, this recipe is super easy. From this point on in life you will keep a can of pumpkin and a cake mix in your pantry.  It’s that easy.

Although I made 18 of these things at once, the recipe is for one delectable Pumpkin Cake Roll. I have to make one every year and lately they are finding themselves to be Ma’s Birthday Cake since she was born at Thanksgiving time.  Don’t be intimidated by the “roll”, they are pretty easy and the results are striking!
