Breakfast Quiche Kebabs

DSC03220-001 It’s Friday Eve as I type this and I must say that I am plum-tuckered-out. Our last two weeks have been a whirlwind of activity, all good and very exciting things are happening for our family and I will share it all at another time. I keep asking the kids to pinch me because it all feels like a dream, and you know what, it is, a huge dream come true. But enough about that, everyone is hungry. Tonight’s dinner had to be quick and easy, and nothing is easier than brinner- breakfast for dinner.

Using my Calphalon 24 mini muffin pan, I was able to make this dinner all at once. One mixing bowl, one baking pan, done. Yes!

DSC03231-001These little quiche only have three ingredients- shredded cheese, eggs, and minced onion. I am KISS-ing for sure with this recipe (Keepin’ It Summertime Simple)!  We love smoky kielbasa for these kebabs, and Team BRK also loves to have Organic Maple Syrup on the side for dipping.  The quiche are crispy on the outside and soft on the inside.  The Kebabs are a great source of protein for a great start to your day. Or finish, as in our case.  These will pack very well and are just dandy at room temperature too.

Breakfast Quiche Kebabs

Packed with protein, and great for packing.
Ingredients
  • 12 ounces Smoked Kielbasa, cut into 12 pieces
  • 2 cups shredded cheddar cheese (I used half cheddar, half pepper jack)
  • 1 tsp. dried minced onion
  • 2 eggs, I used Safest Choice™ Pasteurized Eggs
  • 6 strawberries
  • Maple Syrup for dipping, optional
Instructions
  1. Preheat oven to 350 degrees.
  2. In a 24 cup mini muffin pan, add the kielbasa to 12 of the cups.
  3. In a mixing bowl mix cheese, onion, and eggs by hand until well blended.
  4. Scoop egg mixture into the other 12 muffin cups by rounded tablespoons. Press down slightly.
  5. Bake for 20 minutes. If you don't think you will like the edges crispy, then bake for 15-17 minutes.
  6. Remove from oven and thread onto 10 inch wooden skewers- two quiche and two sausage pieces each, ending with a strawberry.
  7. Serve with Organic Maple Syrup if desired.
  8. Makes 6 skewers. Serves 3-6 depending on how hungry you are or if you are serving these with other items.
Notes
You can make these for the tiny people in your life by using shorter skewers with only one each of the quiche and sausage along with a strawberry. Get creative and make it special for your family!
