Simple Cantaloupe Bites

photo (1)Summer is here! And with that comes a bazillion parties. This means I need to be ready with some super duper simple dishes that I can prepare without much fuss but with a ton of fresh flavor. I scored a sweet melon the other day and paired it with salty Prosciutto, and for a refreshing kick, a leaf of mint from my garden. What a pleasant combination. Pairs extremely well with Prosecco. Cheers to summer!

Simple Cantaloupe Bites

Simply simple.
Ingredients
  • 12 one inch cubes cantaloupe
  • 3 ounce package prosciutto, 6 slices
  • 12 mint leaves
  • 12 toothpicks
Instructions
  1. Slice each piece of prosciutto lengthwise to make 12 long strips.
  2. Place a mint leaf on top of each piece of melon and wrap with one strip of prosciutto.
  3. Secure with a toothpick and serve.
  4. Makes 12 pieces.

    I always use basil when I make that – never thought of mint – love it!! Happy Summer to you Robin Sue!
